Lasagna (Make ahead and Freeze - Small recipe)

Instant Pot, Main Entree, Make Ahead and Freeze

Ingredients

1/2 pound ground beef (8 oz)

1/2 pound ground Italian sausage (8 oz)

3 cups spaghetti sauce (24 oz)

1/2 cup water for recipe (4 oz)

1 teaspoon Italian seasoning

1 teaspoon garlic powder

2 cups mozzarella cheese shredded (8 oz)

1 cup colby jack cheese shredded (4 oz)

1/2 cup parmesan cheese grated (2.5 oz)

8 oven ready lasagna noodles

Description

Original Recipe - 7x3" round pan - 115 cu in
This recipe is built around fitting into an even number of pans that fit in the instant pot. For that reason the ingredients don't fall on even package sizes.

Directions

1. Brown and cook sausage and ground beef. Drain.
2. Add spaghetti sauce and cook to a simmer. Add water and seasonings. Let simmer about 10 minutes. 
3. Spray bottom of an Instant Pot safe pan with cooking spray. 
4. Put a thin layer of spaghetti sauce on bottom of pan and sprinkle with parmesan cheese. 
5. Place 1 layer (3 or 4) of lasagna noodles (uncooked) on top of sauce. Break into pieces to make them fit. 
6. Add a layer of sauce, parmesan cheese, colby jack, and mozzarella. 
7. Repeat layers until you reach the top, and on the last layer of meat, cover with just mozzarella cheese. 
8. Install cover onto pan (or cover with foil)
9. Freeze

When ready to eat, remove from freezer and do not thaw.

Place 1 cup water in bottom of Instant Pot. Place trivet in water. 
Place pan on top of trivet. 
Close the lid, make sure the valve is not set to release pressure, and set IP to cook for 50 minutes on high pressure (20 minutes if fresh and not frozen)
After the timer completes, let the IP release it's pressure naturally for 10  minutes, and then release the rest. 
Remove from Instant Pot and remove foil. Place under broil for 2-3 minutes, or until cheese is browned and crispy.

1 9oz of Barilla Oven Ready Lasagna noodles has 15 noodles in it and they are sized good for small pans. I prefer 3 noodle layers per pan.

Should cover with foil before cooking to avoid steam leaking into the container.

Can sprinkle a fresh layer of cheese on top right before the broiler for extra cheesiness.
